Today I decided to do some baking with the boy. When Ashley (My Wife) reminded me our shopping hadn’t been delivered, I felt like ‘Old Mother Hubbard’ as the cupboard was bare. Luckily we did have some stock basic ‘pantry’ items. I manage to find self raising flour, sugar, butter and eggs and Peanut Butter! One problem I am not a baker!
90% of the baking in our house hold comes from Ashley, I am famously rubbish at it! I can cook but with cooking it is easier to make it up as you go along without follow a recipe. When baking you have to get it right for the cakes to rise, its chemistry. So to ensure I had the right measurements I grabbed our electronic scales! One problem, a flat battery! I recalled that previously I had used 1 and 1/4 bowls of flour when making cakes, so decided it was worth a try, If they went wrong they went wrong! Oliver would still have fun mixing it!
I got everything ready and without any prompting Oliver put the paper cases in the baking tray (I am assuming he learnt this at Nanny’s!)
I tried to remember quantities of ingredients and ended up adding 2 extra eggs to get the right consistency. I chucked all the ingredients into the bowl and handed to Oliver to mix:
This is when things became a little more interesting. I added some crunchy peanut butter and raisins. I had no idea how this would turn out, but seemed a great idea at the time! Oliver disappeared while I filled the paper cases but unsurprisingly suddenly appeared again to lick the spoon!!!!
After they had been in the oven for (I think around 20 minutes) they were placed on a cooling rack. They looked like they had been successful, Oliver was extremely upset that he had to wait for them to cool down! However when our ‘mini Paul Hollywood’ did get his chops around them the reaction was good…
As the cakes passed the test from one of the harshest critics I will share the ‘recipe’ with you. I say ‘recipe’ but it is more of a brain dump of an experiment!
Peanut Butter & Raisin Cakes
- 2 Tablespoons of butter
- 1 1/4 Desert bowl of self raising flour
- 1 Dessert bowl of sugar
- 4 eggs
- 1/2 cup raisins
- 1/2 cup peanut butter
- Add together all ingredients in a bowl and hand mix with a wooden spoon for 4 minutes
- Divide mixture between 12 cake cases
- Bake on 150 C for 20 minutes
